This exceptional cheddar is made in collaboration with Amish farmers in Lancaster, PA. Made during the grazing season from the 100% grass-fed raw milk and features native cultures and minimal salt.


The cheese is aged between 14-24 months and a natural rind is allowed to form on the outside of the ten pound blocks. The result is a mellow, distinctive, pleasing, flavorful cheese that appeals to the cheese beginner and expert alike. As it ages, lovely hints of crystallization develop. It even shines in macaroni and cheese or atop chili!
